AOP Languedoc

The famous Copa Santa! A Pierre Clavel wine… A bottled icon! Ever since the first vintage in 1992, this wine has never lost its recognition among aficionados. A high-end cuvée crafted in enough bottles to appease everyone. Up until 2016, Copa Santa was made with the grapes from La Méjanelle. As of 2017, the grapes have been coming from Montpeyroux.

How we make it

  • A majority of Syrah grapes topped with Grenache noir
  • Manual harvesting
  • Aged 20 months in oak barrels

How we drink it

Its unique personality goes well with bold tasting, generous dishes such as jugged hare with black currants or lamb roasted with wild herbs. BBQ-wise, spicy or fennel sausages are the match. When it comes to cold dishes, a duck breast carpaccio or the subtle yet powerful flavors of sliced octopus with chick peas and chorizo will be great companions.
